Is there anyone who does not like Mango Pickle? I dont think so. Lets begin the mango season with this lip-smacking pickle. 🙂 Yes, As the name suggests it is an instant mango pickle recipe. I am a big fan of mango pickle especially homemade. I should say, this is my grandma’s recipe. This is the best mango pickle recipe I have ever tasted.  Its very quick and easy too.. Had posted this recipe long back. Now updated with new pics and video.. Do try my grated mango thokku too.

Mango Pickle My Magic Pan

[Preparation Time-10 mins : Cooking Time-10 mins]

Instant Mango Pickle Ingredients:

  • Raw Mango – 1
  • Chilli powder – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Hing/Asafoetida – 1/4 tsp
  • Salt – as needed
  • Oil – 2 tbsp
  • Mustard seeds – 1 tsp  (to temper)

To dry roast & grind

  • Mustard Seeds – 1/2 tbsp
  • Fenugreek seeds – 1 tsp
  • Red Chilly – 2 nos

Method:

  • Wash the raw mango and chop it into small pieces. Mean while heat a pan & roast mustard, fenugreek seeds and dry chillies one by one separately.

  • Heat a pan with oil and temper with mustard seeds. In the same hot oil add hing, salt, tumeric powder, chilli powder and the chopped mango pieces. Mix well.

  • Let it cook for a few mins. Grind the dry roasted ingredients into a coarse powder. Add this to the spiced mango mixture. Mix and switch it off.(Cook only for a few seconds)

Thats it.. Instant mango pickle is ready.
Let it cool and transfer it to a dry jar. Stores well for 4-5 days in room temperature and for an extra 2-3 days when refrigerated.

Enjoy with curd rice.

Tips:

  1. Dry roast the ingredients separately as each one takes a different time in getting roasted.
  2. Add the coarsely ground finally, mix well and switch off the flame. If over cooked the pickle will turn out to be bitter.
  3. Adjust salt & chilli powder according to the tanginess of mangoes.
  4. I usually do not peel the skin for this pickle, since it was very thick peeled it in the video.
