Pudina Aloo – Minty Potatoes

I love potatoes and I think I have said it in all my potato posts!! I also love the flavour of mint!! This Pudina Aloo is yet another simple and lip-smacking recipe with baby potatoes and the magical aroma and flavour of mint!! This can be served as a side dish for roti or rice or even as a starter. Just mind the amount of spiciness if serving as a starter!!

Without much more blah blah blah, lets get to the recipe..

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Baby Potatoes – 1/2 kg
  • Oil – 3 tbsp
  • Jeera/cumin – 1 tsp
  • Salt – as needed
  • Chilli powder – 1/2 tsp
  • Mint leaves – 1/4 cup (loosely packed)
  • Ginger – 1 inch piece
  • Green chilly – 1

Method:

  • Wash and cook the baby potatoes until cooked yet firm. U can pressure cook it for 2 whistles if u wish. Once it cools down, peel the skin and keep it ready.

  • Take mint leaves, ginger and green chilly in a mixer and grind it into a smooth paste. U can add a tbsp of water for ease of grinding.

  • Heat a pan with oil and temper with cumin seeds. Add the ground paste and saute it until the raw smell goes off. Now add the cooked potatoes, salt and chilli powder.

  • Mix well and saute in low-medium flame until the masala blends well and the potatoes get roasted well. Switch off the flame.

Thats it!! Lip-smacking and flavourful Pudina Aloo is ready!!

Tips:

  1. U can add a handful of coriander leaves too while grinding the paste.
  2. Adjust green chilly and chilli powder according to your preference.
  3. U can add lemon juice from 1/2 a lemon for a tangy taste. It will retain the green colour of the ground mint paste as well.
