While we are all still staying at home, am trying to make food more interesting with the limited ingredients available in the pantry or at the stores. This Sweet Corn Gravy is one such recipe. I have never tried a gravy with sweet corn. Well before that I am not a big fan of sweet corn so I seldom buy it. I had grabbed a bag of frozen sweet corn before the lockdown, just because frozen peas was not available. So now it justifies why I am here with this Sweet Corn Gravy recipe. It turned out really well, sweet corn in spicy gravy. We liked the sweet-spicy combo. Do try my Peas Masala or Methi Matar Malai recipes if you want to use Peas instead.

Lobia Masala – Lobia Masala Curry

Lobia is nothing but black eyed peas. Lobia Masala is a delicious gravy recipe perfect to go with roti and rice. This requires some planning time to soak the black eyed peas. But need not be soaked overnight like Rajma or Chana. Other than that this can be made very quickly. There are 2 ways of doing this. One way is by cooking the lobia first and then adding it to onion-tomato base and the second way is making the onion-tomato base, adding the soaked lobia to it and pressure cooking it. I have followed the 2nd method. Check my Rajma Masala gravy if u want to follow the 1st method.

Paneer is always a favourite at home. This Tawa Paneer Masala is full of flavours. Its a super-yummy, semi-dry curry that goes well with roti & pulao varieties. Ideally as the name suggests it is made in a tawa. Since I do not have one ideal to make this, I made it in my usual pan. Its the quickest paneer recipe unlike the usual Paneer Butter Masala or Shahi Paneer. Not much planning is needed here as it just calls for the usual ingredients available in the pantry.
