Panchratna Dal – Mixed Dal with 5 Lentils

Panchratna Dal or Panchmel Dal is a protein packed dal with 5 types of lentils. It is a very nutritious and healthy dal that compliments well with roti/rice. Its a breeze to make this dal. I usually make this Panchratna Dal when we get bored with the normal Dal. We really love the flavours of this mixed dal.

[Preparation Time-45 mins : Cooking Time- 20 mins]

Ingredients:

  • Urad Dal – 1/4 Cup
  • Chana Dal – 1/4 Cup
  • Masoor Dal – 1/4 Cup
  • Green Gram Dal – 1/4 cup
  • Toor Dal – 1/4 Cup
  • Tomato – 2 (small)
  • Onion – 2
  • Ginger – 1 inch pc
  • Garlic – 4 to 5 cloves
  • Green chilly – 1
  • Ghee/Oil – 2 tbsp
  • Jeera/Cumin seeds – 1 tsp
  • Dry red chilly – 1 (optional)
  • Salt – as required
  • Chilli powder – 1 tsp
  • Coriander powder – 1 tbsp
  • Jeera powder – 1/2 tsp
  • Amchur Powder – 1/2 tsp
  • Garam masala powder – 1 tsp
  • Turmeric powder – a pinch
  • Coriander leaves – few

Method:

  • Mix and soak all the dals for 30-45 mins. Chop the tomatoes roughly and add it to the soaked dal. Add a pinch of turmeric powder, enough water and pressure cook for 1 whistle and simmer for 10 mins. Switch off the flame.

  •  Mash the cooked dal well. Add water according to the consistency u require. Take ginger, garlic and green chilly and crush it in a pestle & mortar. Keep it aside.

  • Heat a pan with ghee or oil and temper with cumin seeds & dry chilly. To this add finely chopped onions and saute until transparent. Now add the crushed ginger-chilly-garlic paste and saute till the raw smell goes off. Add all the spice powders – salt, chilli powder, coriander powder, cumin powder, garam masala, amchur powder and mix.

  • Saute the onions with all the spice powders for a few seconds. Make sure not to burn the masala. To this add the cooked and mashed dal and mix. Add water if needed and check for seasoning. Let it boil for a few mins so that all the flavours combine well. Finally add coriander leaves and switch off the flame.

That’s it!! Panchratna Dal is ready!!

Serve this protein packed dal, hot with roti or rice!!

Tips:

  1. U can choose the dal(lentils) combo as per your choice. Like urad dal with skin instead of urad dal, moong dal instead of green gram dal, moth beans etc….
  2. Grind the ginger-garlic-chilly paste in a mixer if u find that easy. We like the flavour better, when crushed in a pestle & mortar.
  3. U can skip onions, ginger/garlic for a No-Onion No-Garlic version.
  4. Adjust spice levels according to your taste buds.
  5. U can add chopped tomatoes after sauteing the onions instead of pressure cooking along with the dal.
  6. U can add a tbsp of fresh cream finally for a richer taste.
