Beetroot is not my favourite. Hubby & Chotu love it though. I usually make this Beetroot Fry for chapathi/rice & love this Halwa!. This time I made this Beetroot Pulao as an one pot meal. It was perfect & quick for a lazy weekend. The lovely colour will attract kids and people who do not like beetroot like me will not make a big fuss! This Pulao and a simple raita would do to compile a hearty meal.

Carrot Burfi is a mouth-watering sweet perfect for Diwali. This is yet another sweet which does not need sugar syrup consistency. It is a no fail recipe even beginners can try. Nobody will be able to find out that it is made out of carrot. The combo of besan makes it taste like carrot mysore pak. Though the procedure for mysore pak is different. Sweet Potato Tawa Fry – Sweet Potato Fry

Kootu / Poriyal Varieties, Potato Recipes

Tawa frying veggies has been my long time wish. I have seen many people tawa frying yam. I made this Sweet Potato Tawa Fry last week and it was a super hit. I somehow feel like making some non-veg as it resembles fish fry. Sweet Potatoes were the best to tawa fry as they get cooked very quickly. They were sweet, spicy, crispy.. Yumm!! I guess this will be on repeat mode for a while. 🙂 All u need is to plan 30 mins for the marinating part, otherwise it can be made in just 15 mins. Check my sweet potato fry recipe too.

Red Capsicum Soup – Roasted Capsicum Soup

Bell Pepper/Capsicum, Soups
-
Soups are recently in demand at home, since the weather has started changing. Its getting really cold. I feel, a hot bowl of a filling soup in the evenings is a better alternative to tea/coffee. Later a light supper/dinner would do, to finish the day. This Red Capsicum Soup had been in my to do list since a long time. I usually prefer the green and yellow peppers as I feel the red ones have a slight fruity flavour. But the red ones served best in making this soup. It was so flavourful. The colour is very attractive to tempt kids as well. Check my other soups HERE

Beetroot, Chutney Recipes, Side Dish for Idli/Dosa
-
Beetroot Chutney, the very name is so unique.. I am not a big fan of beetroot, all I end up making is this simple poriyal or this soup! My favourite is halwa though 🙂 I can’t think of anything else. I had some beetroots sitting in the fridge and did not want to make the same old dishes as above. So made this chutney, though I was skeptical in the beginning. Trust me it tasted so good! Went on well with idli, dosa and even with hot rice.

Mixed Veg, Snacks / Starters

Veg Quesadilla or Quesadilla – Until last month (during our India trip) I had no clue on what this Quesadilla was. All I knew was “Kaise kaise bhi ho, acha hai ye paratha” hahahahaha. Do u recognise this dialogue? This is what Sridevi said about it in the movie English Vinglish. Even then I was least bothered to know about it & was just glued to her expression in the movie. Now back to the recipe, my BIL (brother in law) made this for us and it was just yumm!! Especially Chotu, his tummy got expanded to fill in some extras! Infact even mine 🙂
He had made it with a...
