It has been a long time since I disappeared from here! Reason being, I had been on a vacation to India. Getting back to the normal routine now.. This year Pillayar Chathurthi is on the 13th – Thursday. Am sure all of you would be busy with your preparations! This Sweet Ammini Kozhukattai is a sweet variety. I simply love these mini kozhukattais. I have already posted a Spicy version of this for those who do not have a sweet tooth unlike me. Check it out HERE. U can cook these mini buddies and make both the versions if u wish too.
Now to the recipe..
[Preparation Time-15 mins : Cooking Time- 25 mins]
Sweet Ammini Kozhukattai Ingredients:
- Rice Flour – 1 cup
- Water – 1 to 1 & 1/2 cups
- Salt – a pinch
- Milk – 1 tsp
- Oil – 1 tsp
- Jaggery – 1/2 cup
- Water – just upto immersing level
- Coconut – 2 tbsp
- Cardamom – 2
Method:
- Dry roast the rice flour just until it is warm. Keep this aside. Heat a pan with water. Add salt, oil and milk to it. Let it boil. Simmer and add the rice flour stirring simultaneously.
- It will become thick very quickly. Mix until it forms like a dough. This will take a few mins only. Transfer it to a wide bowl and press it with your hands to form a smooth dough while it is still warm. Keep it covered.
- Grease your hands with little oil. Take a very small sized dough and make a small ball. Make the same with the rest of the dough. Steam it in an idli pot or steamer for 7-8 mins.
- Meanwhile, dry roast the grated coconut in a pan until slightly brown. Keep it aside. In the same pan, add jaggery along with water. Let it dissolve and come to a boil.
- Strain the jaggery syrup to remove impurities. Heat it again until is slightly thick. Now add the cooked mini kozhukattais, roasted coconut and caramom powder. Mix well & cook for 2-3 mins so that it coats the kozhukattais well. Switch off.
Sweet Ammini Kozhukattai ready!
Enjoy!
Tips:
- Do not over cook the Ammini Kozhukattai. Else it will become hard and rubbery.
- U can add a tsp of roasted sesame seeds too.
- Make equal sized balls to ensure even cooking.
- Roasting coconut is optional. U can add it as is.
- Water quantity for making the dough depends upon the rice flour, U might have to use less or more of what is mentioned above. Adjust accordingly.
- I have used store bought rice flour.
