How to make Homemade Ghee – Ghee Recipe

June 1, 2021 Basics  No comments

How to make Homemade Ghee? Its very simple, healthy and much flavourful than the store bought ghee. I am using store bought butter though. You can make it from scratch too. Ghee is a traditional item in Indian cooking. To me, food without ghee is incomplete. I love to smear it on phulkas, parathas, rice with rasam, sambar, dosa with podi and most favourite of all are sweets. I always use unsalted butter to make ghee. Back in India amma adds Drumstick leaves finally to make it even more flavourful. I have added the same. 🙂

  • Keep stirring in intervals to avoid burning at the bottom. After a while it will start bubbling and become foamy. It will increase in volume. Reduce the flame and cook until it changes colour (slight brown). Switch off.

  • The bubbles will subside. It will be golden in colour which is the perfect consistency. To this add drumstick leaves or cury leaves and let it splutter. Keep this aside, it will taste very good.

  • Strain it with a metal strainer to discard the sediments. Clear and golden ghee is ready. Once it cools and comes to room temperature it will become grainy.

Tips:

  1. Always use a wide, big and heavy bottom pan to make ghee. If the pan is small, ghee will spill over. If the pan is not heavy bottom, it will get burnt at the bottom.
  2. Adding drumstick leaves or curry leaves gives a nice flavour. You can leave it if not available.
  3. Use good quality butter, you can use homemade butter too.
  4. Another short cut method to make butter is to churn cream. You can then make ghee as above.
  5. Make sure to use a metal strainer to strain the hot ghee.
