Winter days are already here & its freeeeezing now-a-days. All I want is something hot to drink. Soups are always welcome at home. This Butternut Squash caught my eye during last week’s shopping. Hence the result – Butternut Squash Soup 🙂 I should say it is deliciously creamy & sweet. It has a mild nutty flavour which I loved the most. I bought a small tin of cream too, but did not find the need to use it in the soup as it was super thick & creamy. So try this warm, hearty & filling soup. Its a perfect soup to pack it in a flask for lunch too!

Butternut Squash Soup Ingredients:
- Butternut Squash – 1 small (Chop into cubes)
- Onion – 1
- Ginger – 1 inch piece
- Salt – as needed
- Pepper – as needed
- Olive Oil – 1 tbsp
- Walnuts – few (optional)
Method:
- Peel the skin of the butternut squash. Remove the seeds and the fibre part from inside. Chop it into cubes. Keep it aside. Chop an onion and a piece of ginger roughly. Heat a pan with oil and add the ginger & onion. Saute until translucent.
- Now add the cubed butternut squash, salt & water. Cook covered until it becomes soft. Let it cool down, strain the water & transfer it to a mixer.
- Grind it smooth. I used up the strained water in the grinding process. Transfer it to the same pan and heat it. Add pepper and check for salt. Just bring it to a boil and switch off.

Tips:
- Ginger gives a unique taste, do not skip it.
- U can add carrots along with the butternut squash.
- Dried herbs can be added for more flavour.
- U can add fresh cream for richness. I just used it to garnish.
