Rasam always gets a warm welcome at home! Any type of rasam and a simple stir fry is an all time comfort food. This time it is a simple and flavourful Watermelon Rasam. Yes it is, u heard it right! Its sweet, sour, tangy – all tastes in one rasam. Nobody at home could find out that it was made out of watermelon. Watermelon is the hero of this recipe. I de-seeded the watermelon and extracted juice. Last but not the least, it is very colourful 🙂 Rasam and potato fry is the best combo.

Watermelon Rasam My Magic Pan

 

[Preparation Time-15 mins : Cooking Time- 10 mins]

Watermelon Rasam Ingredients:

  • Watermelon – 1 cup (de-seeded & chopped)
  • Oil – 1 tsp
  • Mustard – 1 tsp
  • Fenugreek seeds – 1/4 tsp
  • Asafoetida – a generous pinch
  • Curry leaves – a sprig
  • Green chilli – 1 (slit)
  • Garlic – 2 cloves (crushed)
  • Tamarind paste – 1/2 tsp
  • Salt – as needed
  • Turmeric powder – a pinch
  • Coriander powder – 2 tsp
  • Jeera – 1 tsp
  • Pepper – 1 tsp
  • Coriander leaves – few

Method:

  • Heat a pan with oil and temper with mustard, fenugreek seeds & asafoetida. Add curry leaves, slit green chilli and crushed garlic. Saute for a few seconds. Now add tamarind extract, required water, salt & turmeric powder. Meanwhile take pepper, coriander seeds & jeera in a mixer.

  

  • Grind it into a coarse powder. Add the rasam powder to the tamarind extract mixture and heat it in medium flame. Meanwhile take the watermelon chunks in a mixer.

  

  • Make a juice. I just left some chunks as is and did not make a smooth juice. Add this juice to the rasam. When it comes to a boil and is frothy, switch off and add fresh coriander leaves.

  

 

Thats it! Flavourful Watermelon Rasam is ready!

Serve hot!

 

 

Tips:

  1. U can de-seed the watermelon and extract juice or make a juice and strain it. Sometimes the watermelon might not be very sweet. It would be perfect to make rasam out of a bland watermelon too.
  2. I normally make variations in my rasam powder. U can use your way of rasam powder.
  3. U can add a tbsp of cooked toor dal.
  4. Do not boil the Watermelon Rasam for a long time. Switch it off when its frothy.
