Watermelon Popsicle

Watermelon is the most refreshing fruit one could enjoy in summer!! When I bought a large watermelon last week, half of it went in the making of Watermelon Cooler and the rest in this Watermelon Popsicle. Popsicle is a new craze for me this summer, especially I love those cute popsicle moulds that catch my eyes whenever I go shopping. So just to show off my 2nd new popscile mould, here comes this Watermelon Popsicle!! 🙂

Now to the recipe..

[Preparation Time-10 mins : Freezing Time- 6-8 hrs or overnight ] 

Ingredients:

  • Watermelon – 2 cups (cubed)
  • Sugar – as needed
  • Lime Juice – from half a lemon

Method:

  • Peel, deseed the watermelon and chop it into cubes. Take the cubed watermelon, sugar and blend until smooth. Add the lime juice to it and blend once.

  • Take a popsicle mould and pour the mixture in each hole upto 3/4 th level. Freeze it in a freezer for 6 to 8 hours or overnight. Once frozen, remove it from the freezer and hold it in tap water for a few minutes. This will help in getting the Watermelon Popsicle easily out of the mould.

Tips:

  1. U can use honey instead of sugar. I personally preferred a little extra sweetness as it tends to be less sweet when frozen.
  2. I did not strain the watermelon mixture as I had removed the seeds. If not u can strain it and then freeze.
  3. U can add a few mint leaves and blend for an extra flavour.
  4. Do not worry if u dont have a popsicle mould. Use disposable cups, cover them with kitchen foil and pierce in some popsicle/icecream sticks to make it.
