Vegetable Biryani – Easy Vegetable Biryani in Pressure Cooker

Vegetable Biryani is a simple & easy one pot meal. There are various methods of making biryani like layering, dum biryani etc.. This is a quick, no fail vegetable biryani recipe made in a pressure cooker. Onion Raita is a good combo for this but my favourite is with Ennai Kathrikai (recipe coming soon) This is a perfect lunch box menu too..

[Preparation Time-10 mins : Cooking Time- 30 mins]

Ingredients:

  • Basmati Rice – 1 cup
  • Water – 1 1/2 cups
  • Onion – 2
  • Tomato – 1
  • Chopped vegetables – 1 cup ( I used carrot, beans & potato)
  • Biryani Masala – 1 tsp
  • Salt – as needed

To Temper:

  • Oil – 2 tbsp
  • Ghee – 1 tbsp
  • Cloves – 2
  • Elaichi – 2
  • Bay leaf – 1
  • Star Anise – a small piece

To grind:

  • Mint leaves – 10 to 12
  • Coriander leaves – few
  • Chilly – 2
  • Garlic – 4
  • Ginger – a small piece

Method:

  • Take a blender and grind the ingredients mentioned under ‘to grind” into a paste. Keep this aside. Chop all the veggies as required and keep it ready.

  • Heat a pressure cooker with oil & ghee. Temper with the ingredients mentioned under “to temper”. Add sliced onions and saute until transparent. Then add chopped tomatoes and cook until they become mushy.

  • Now add the ground paste and cook until raw smell goes away. Add salt & biryani masala powder and saute for a few seconds. Add the chopped vegetables and mix.

  • Add washed basmati rice, saute and add water. Mix well and check for salt. Pressure cook for 1 whistle and simmer for 5-7 mins. Switch off the flame. Once the pressure releases fluff it with a fork.

Vegetable Biryani is ready.

Serve hot with raita and chips.

Tips:

  1. U can add a tbsp of curd before adding/cooking rice.
  2. U can add vegetables of your choice like cauliflower, peas…
  3. U can add coconut milk instead of water, or even half & half for a rich taste.
  4. U can garnish with fried cashews & bread pieces.
