Veg Quesadilla – Vegetarian Quesadilla

Veg Quesadilla or Quesadilla – Until last month (during our India trip) I had no clue on what this Quesadilla was. All I knew was “Kaise kaise bhi ho, acha hai ye paratha” hahahahaha. Do u recognise this dialogue? This is what Sridevi said about it in the movie English Vinglish. Even then I was least bothered to know about it & was just glued to her expression in the movie. Now back to the recipe, my BIL (brother in law) made this for us and it was just yumm!! Especially Chotu, his tummy got expanded to fill in some extras! Infact even mine 🙂
He had made it with a few ingredients which was not available in hand. Have mentioned it below… Last week, as usual I had a few tortilla wraps that was expiring & got converted it into a lovely dinner!

Now to the recipe..[Preparation Time-10 mins : Cooking Time- 20 mins]
Veg Quesadilla Ingredients:
- Tortilla wraps – 6
- Onion – 2
- Capsicum – 2 ( I took 1 of each colour)
- Baby Corn – 10 to 12
- Cucumber (de-seeded) or Zucchini – 1 (small)
- Oil – 1 tbsp
- Salt – as needed
- Chilli flakes – 1/2 tsp
- Pepper powder – 1/2 tsp
- Mixed herbs – 1 tsp
- Tomato sauce – as needed
- Mayonnaise – as needed
- Cheese – as needed
Method:
- Heat a pan with oil and add cubed onion. Saute for a minute, let it be crunchy. Add the peppers & baby corn. Saute until soft yet crunchy. Finally add the de-seeded cucumber and saute.
- Add salt, pepper powder, mixed herbs & chilli flakes. Mix to combine. Veggies ready. Heat a tava and toast the tortilla wraps on both side for a minute. Keep the flame on low. Spread the tomato sauce on it.
- Spread the veggies on one side of the tortilla. Smear some mayonnaise on it and top with grated cheese.Fold it and toast on both sides by flipping carefully until its golden brown. By this time the cheese would melt. Cut it into 2’s or 3’s as per your preference.
Thats it!! Veg Quesadilla ready!!
Serve hot!
Tips:
- U can use zucchini instead of cucumber. I had only cucumber in hand, so de-seeded it and used to prevent it from becoming soggy.
- Fajita seasoning is what my BIL had used to season the veggies.
- U can used spiced mayonnaise to spread on the tortilla instead of tomato sauce.
- Other veggies such as tomato (de-seeded), mushroom or egg plant plant can be used.
- U can use home made tortillas or even our normal chapathi.
