Tawa Pulao or Pav Bhaji Pulao is a popular street style Pulao of Mumbai. Street vendors use a big sized tawa. I simply love the way they make Pav Bhaji. Wanted to try this Tawa Pulao since a long time but wanted to try a small amount as to fit my size of Tawa. Made it on a day when I cooked lunch only for me 🙂 Made this just to post it here, otherwise would have ended up eating noodles or Pasta. Came out very well. Apparently just gave a taster to my boys and made it again the next day on popular demand. 🙂 Check the video..

Tawa Pulao My Magic Pan

 

[Preparation Time-15 mins : Cooking Time- 30 mins]

Tawa Pulao Ingredients:

  • Basmati Rice or Long Rice – 1 cup
  • Onion – 2
  • Tomato – 1
  • Capsicum – 1/2
  • Carrot – 1
  • Peas – 1/3 cup
  • Butter – 2 tbsp
  • Oil – 1 tbsp
  • Salt – as needed
  • Chilli powder – 1/2 tsp
  • Turmeric powder – 1/4 tsp
  • Pav Bhaji Masala powder – 2 tsp
  • Coriander leaves – few

Method:

  • Heat water in a pan (say about 3 cups) and let it boil. Add basmati rice or long grain rice along with salt and cook it until it is 3/4 done. This might take 10-12 mins roughly.

  • Strain the rice and keep it aside. Heat a tawa and add 1 tbsp of butter and 1 tbsp of oil. Add cumin seeds and let it crackle.

  • Add finely chopped onions and green chilly. Saute until transparent. Now add finely chopped carrot, capsicum and green peas.

  • Add a little bit of salt and cook until soft yet crunchy. Now add finely chopped tomato.

  • Add required salt, chilli powder, turmeric powder & pav bhaji masala powder. Mix well and cook until tomatoes are mushy. U can add 1/4 cup of water for ease of cooking. Add 1 tbsp of butter at this stage.

  • Cook until oil oozes out. Add the cooked basmati rice to it.

  • Mix gently without breaking the rice. Add fresh coriander leaves and switch off the flame.

Serve hot with raita of your choice.

Tips:

  1. Making it in the tawa is the highlight of the recipe. Try making it in it. It sure gives an unique taste.
  2. Add salt carefully as we are adding in different stages.
  3. Make sure not to over cook the veggies. It would taste good with a crunchy bite.
  4. U can cook the veggies separately too.
  5. Other veggies that can be added are beans, cauliflower, potato…
  6. Butter gives an unique taste.
