Spinach Soup – Palak Soup

Soups are always comforting especially in cold and rainy weather. This Spinach Soup is a yummy and healthy soup with full of goodness. It is such an easy recipe to make. What I really love about this Spinach Soup is the vibrant and attractive green colour. Green vegetables are rich in iron. So enjoy this healthy, nutritious soup as and when the weather demands!!! My personal fav is tomato soup!

I had posted this recipe in December 2015, now updated with video! “This Spinach Soup has been lying in my drafts for more than a week now. Was so upset and busy trying to find updates about Chennai floods all this time. Phew!! Much relieved now. Wishing all my Chennaites to bounce back to normal life very quickly “

Here is the video..

Now to the recipe..

  • Garlic – 3 to 4 cloves

Method:

  • Separate the spinach leaves. Wash them in cold water and chop roughly. Chop the onion and garlic too. Heat a pan and add butter. Add the bay leaf, followed by onion and garlic. Saute until the raw smell goes off. To this add roughly chopped spinach.

  • Saute for a couple of mins or until the spinach leaves shrink. Add hot water to this and cook for about 3-5 mins. Once cooked drain the water and keep it aside. Let it cool. Take a mixer and add the cooked spinach to it. Grind the spinach mixture into a smooth paste. (Use the strained water if needed or add it while cooking) .

  •  Add the spinach paste and milk to the same pan and heat it. Add salt and pepper powder. Finally make a paste of cornflour with little water and add it to the Spinach Soup. Just bring it to a boil and switch off the flame.

Tips:

  1. U can use oil/olive oil instead of butter.
  2. U can use fresh cream for additional richness.
  3. I have used Indian Palak for making this Spinach Soup.
  4. While cooking the spinach, add very little water. Else it will make the soup very watery. Do not waste the cooked water.
  5. Make sure to add hot water, this will help to retain the bright green colour of the spinach.
