Shahi Paneer

Shahi Paneer is an exotic side dish made with paneer in a thick, creamy and spicy gravy. This goes well with roti, naan or any pulao varieties. Its very popular and can be found in almost any restaurant’s menu. There are some variations in this recipe. I have used a tomato based gravy as per our family’s taste buds.  Check my other paneer recipes HERE!!

[Preparation Time – 15 mins : Cooking Time- 25 mins]

Ingredients:

  • Paneer – 1 cup (cubed)
  • Onion – 2 (small)
  • Tomato – 3 (small)
  • Green Chilly – 1
  • Tomato Sauce – 1 tbsp
  • Chilli powder – 1 tsp
  • Garam Masala – 1/2 tsp
  • Salt – as needed
  • Milk – 1/4 cup
  • Cashews/Badam – 8 to 10
  • Kasuri Methi – a pinch (optional)
  • Oil/Ghee – 4 tbsp

Method:

  • Chop the onions, tomatoes and green chillies. Cut the paneer into bite size pieces. Heat a pan with little oil and add chopped onions and green chilly. Once it turns transparent add chopped tomatoes. Cook until tomatoes turn mushy. Switch off and let it cool.

  • Once the ingredients cool down, grind it into a smooth paste. Heat the pan with remaining oil and add the ground paste. Add required salt, tomato sauce and chilli powder. Mix and cook in low-medium flame stirring it frequently.

  • Now add garam masala and mix. Meanwhile soak cashews or almonds(I used almonds) in milk and grind it into a smooth paste.Continue to cook until oil oozes out.

  • Add the cubed paneer pieces and a cup of water and cook for a few minutes. Add kasuri methi (if using). Finally add the ground badam paste and mix. Cook for a couple of minutes and switch off the flame.

Delicious and creamy Shahi Paneer is ready.

Serve hot with roti, naan or pulao.

Tips:

  1. U can shallow fry the paneer pieces and then add it to the gravy.
  2. U can skip the grinding process of badam/milk and add fresh cream instead.
  3. Adding kasuri methi is totally optional. U can skip and add fresh coriander leaves instead.
