Sambar Onion Pickle – Indian Onion Pickle

I always fancy making pickles at home. My all time favourite is Mango Pickle. A couple of weeks back I happened to buy a whole bunch of sambar onions. Yes, this is the first time I am seeing them tied up like this. See the picture below. Was so excited and bought a whole bunch. So now u know the reason for this Sambar Onion Pickle. It is a totally lip-smacking pickle to go with curd rice. I am glad I made use of it fully in about 2 weeks time without wasting any. 🙂 Do check my other pickle recipes HERE.

Sambar Onion Pickle My Magic Pan

 

[Preparation Time-15 mins : Cooking Time- 15 mins ]

Sambar Onion Pickle Ingredients:

  • Sambar Onion – 2 cups (chopped)
  • Gingely Oil – 1/4 cup
  • Mustard – 1 tsp
  • Asafoetida – a generous pinch
  • Salt – as needed
  • Chilli powder – 2 tsp
  • Turmeric Powder – 1/2 tsp
  • Tamarind paste – 1/2 tsp
  • Roasted fenugreek powder – 1/2 tsp

 

Sambar Onion Pickle My Magic Pan

 

Method:

  • Peel and chop the sambar onions finely. Heat a pan with oil and temper with mustard seeds and asafoetida.

 

  • Add the chopped onions and saute. It should become transparent and shrink in volume.

 

  • Add salt, chilli powder, turmeric powder & tamarind paste. Mix well so that all the raw smell goes off and the pickle gets a togetherness. Finally add roasted fenugreek powder and mix well. Switch off the flame.

 

 

Thats it! Lip-smacking Sambar Onion Pickle is ready!

Allow it to cool down completely and store it in a container.

Tips:

  1. U can add a tbsp of jaggery finally for a sweet and spicy pickle.
  2. I have used gingely oil as it gives a nice flavour. It also acts a preservative along with roasted fenugreek powder.
  3. For fenugreek powder – dry roast 1 or 2 tbsp of fenugreek in low flame until u get a nice aroma. Grind it and use a tsp for this Sambar Onion Pickle. U can use this for making any pickle.

    Hi… it looks yum.. wats tge ahelf life of this pickle wen kept outside or shud refrigerate? If yes, how many days again can we keep
