Red Velvet Mug Cake – Microwave Cake

Red Velvet Mug Cake is an easy and super-quick dessert, perfect for a last minute Valentine treat! My previous trials have never resulted in such bright red colour. Finally found a good quality red food colour and made these gorgeous looking Red Velvet Mug Cakes. I saw this recipe in Gemma’s bigger bolder baking website and made a few changes. It can be made in less than 2 mins (depending upon the power of your microwave), perfect small sized serving & is eggless!! Cant ask for more! Right?!? I just topped my mug cakes with white choc chips. If u want to use a cream cheese frosting – check HERE. U can even top it with a scoop of vanilla ice cream.

Red Velvet Mug Cake My Magic Pan

[Preparation Time-5 mins : Microwaving Time- 2 mins]

Red Velvet Mug Cake Ingredients:

  • All purpose flour – 4 tbsp
  • Powdered Sugar – 4 tbsp
  • Cocoa powder – 1.5 tbsp
  • Baking powder – 1/8 tsp
  • Salt – a pinch
  • Oil – 3 tbsp
  • Milk – 3 tbsp
  • Curd – 3 tbsp
  • Red food colour – 1/2 tsp
  • Vanilla essence – 1 tsp
  • White choc chips – to decorate (optional)

Method:

  • Take oil, milk, curd, vanilla essence & red food colour in a wide bowl. Mix well so that all the ingredients blend well.

  • Now add all the dry ingredients – flour, powdered sugar, baking powder, cocoa powder & salt. Mix well so that it is a smooth batter without any lumps. I used a whisk. Do not over mix.

  • Pour it in a microwave proof mug or use ramekins as I have done. Microwave it for a couple of mins. Check it with a tooth pick. It must come out clean. Decorate with chocolate chips (if using).

Thats it!! Gorgeous looking Red Velvet Mug Cake is ready in a jiffy!

Tips:

  1. Use good quality red food colour, else the color of cocoa powder will dominate.
  2. U can increase cocoa powder if u want, for a strong chocolate flavour.
  3. I have used sunflower oil. U can use canola, vegetable oil or melted butter.
  4. I have not greased the mug before baking, just enjoyed the Red Velvet Mug Cake as is from the ramekins. If u want to serve it separately, grease the mug with a little oil and then bake.
  5. It took 2 mins in my microwave (850 watts). Timings may vary based on the power of your microwave.
  6. Do not over-bake the cake. Else it will become hard and rubbery.
  7. This cake will rise while baking, but will not overflow. U can use a mug or any microwave proof bowl/ramekins.
  8. It might look sticky when hot, let it cool for a while and enjoy!!
