Rava Kesari

Rava Kesari is the most simplest sweet to make. Somehow missed all these days to post it here. Though many of you might know how to make it, I just wanted to add it my collection. It is perfect for sudden cravings as it can be made in a jiffy!! This is definitely a no-fail recipe. The key is to add the right amount of water and make sure there are no lumps.

Now to the recipe…

[Preparation Time-5 mins : Cooking Time- 20 mins]

Ingredients:

  • Rava / Sooji – 1 cup
  • Sugar – 2 cups
  • Water – 3 cups
  • Cardamom powder – a pinch
  • Orange food colour – a pinch
  • Ghee – 4 to 5 tbsp
  • Cashew nuts – 8 to 10

Method:

  • Heat a pan and dry roast the rava until slightly brown. Keep this aside. In the same pan add 2 tbsp of ghee and roast the cashew nuts. Keep this aside. In the same pan heat 3 cups of water and let it boil.

  • Reduce the flame and add the roasted rava. Stir continuously and make sure there are no lumps. Cook in medium flame until it becomes soft and all the water is absorbed. Add sugar and orange food color. Mix well continuously.

  • U can see that it will become watery. Keep stirring in medium flame continuously. Make sure there are no lumps. It will start to thicken. Add the fried cashewnuts, cardamom powder and ghee. In a few minutes it will start leaving the sides of the pan. Switch off the flame.

Thats it!! Rava Kesari is ready.

Serve topped with a dollop of ghee!!

Tips:

  1. Ratio for Rava:Sugar is 1:2 U can reduce it if u want.
  2. Make sure that the rava is cooked well before adding the sugar.
  3. Use good quality of ghee.
  4. U can use yellow food colour too.
  5. Stirring continuously is the main point to get a lump free and smooth texture.
