Pina Colada Popsicles – Popsicle Recipes

Pina Colada Popsicles is a creamy and yummy popsicle made with fresh pineapple and coconut milk. I had recently posted Virgin Pina Colada recipe. U can choose that if u just want to slurp it with a straw. This popsicle is like an upgrade to it, in the sense a much creamier version as we are going to enjoy it in the form of popsicle. Pina Colada Popsicles My Magic Pan

 

[Preparation Time- 15 mins : Freezing Time – 6 to 8 hours]

Pina Colada Popsicles Ingredients:

  • Pineapple – 1 cup (chopped)
  • Coconut Milk – 1/2 cup
  • Vanilla Ice Cream – 2 scoops

Method:

  • Chop the head and tail of the pineapple. Slice off the hard skin and cut the black spots. Slice off the centre hard part too. Then chop the pineapple roughly and take it in a mixer. Grind it smooth. Pour in the coconut milk and add 2 scoops of vanilla ice cream.

  

  • Blend it smooth and strain it using a strainer so that we get a creamy texture. Pour it in popsicle moulds and freeze for 6-8 hours or overnight.

  

 

Thats it! Pina Colada Popsicle ready!

De-mould and enjoy!

Tips:

  1. U can add small chunks of pineapple and coconut shavings or grated coconut in the popsicle mould.
  2. I would recommend to use fresh pineapple and homemade coconut milk.
  3. To make coconut milk at home, grind grated coconut with little water and squeeze it over a strainer to extract coconut milk.
  4. U can use coconut cream instead of coconut milk too.
  5. Fresh tender coconut can be added instead of coconut milk.
