Pav Bhaji is a popular Mumbai street food. This is one recipe me & my sister used to make when we were in our teens and delight our parents. I had noted this recipe from a TV show – cant remember which one as it has been so many years now. But this is the perfect recipe and we still make it the same way. It tastes awesome!!

[Preparation Time-15 mins : Cooking Time- 30 mins]

Ingredients:

  • Pav Buns – 2 (I used burger buns)
  • Potato – 2
  • Carrot – 1
  • Peas – 1/4 cup
  • Onion – 2
  • Tomato – 2
  • Capsicum – 1/2
  • Ginger garlic paste – 1tsp
  • Tomato paste/Ketchup – 1tsp
  • Oil – 2 tbsp
  • Butter – 3 tbsp
  • Chilli powder -1 tsp
  • Pav Bhaji Masala powder – 1 tbsp
  • Salt – as needed
  • Coriander leaves – a few

Method:

  • Pressure cook carrot, potatoes & peas for 2-3 whistles. Once cooked mash them coarsely and keep aside. Heat a pan with oil and add finely chopped onions(reserve some for garnishing) and saute . Once the onions are transparent add ginger-garlic paste and saute until raw smell goes off.

  • To the above add chopped tomatoes and saute until they are mushy. Add required salt, chilli powder & pav bhaji masala powder and cook in low-medium flame until oil oozes out.

  • Add tomato paste or ketchup and mix. Add the mashed veggie – potato, carrot & peas along with some water and let it boil in simmer for a few mins.

  • Add chopped capsicum and let it boil in simmer for 5-7 mins. Pav Bhaji is not complete until butter is added to it. Finally add butter and switch off the flame.

Garnish with finely chopped onions & coriander leaves.

  • Slice the pav buns. Heat a tawa and add a little butter. Once the butter melts toast the pav buns until they are slightly crispy & brown.

Tasty Pav Bhaji is ready.

Serve hot as an evening snack or dinner.

Tips:

  1. U can use other vegetables like beans, cauliflower too.
  2. Do not skip butter as it is the main ingredient that makes the Pav Bhaji very tasty.
  3. U can squeeze some lemon juice finally before serving.
  4. If u do not get pav buns, go ahead with any bun or even normal bread. It tastes good.
