Paneer Sandwich – Kids Sandwich

Sandwich is a quick fix option which I always look forward to! Its an easy and delicious lunch box idea for kids or a filling after school snack. Chotu loves sandwiches, though he has a few choices of filling as favourites. This Paneer Sandwich is one among them. This is loaded with veggies, paneer, cheese & a layer of green chutney (recipe coming next) to add more flavour and spiciness. U can use your choice of bread. And not to forget, this is a grilled Paneer Sandwich.

Now to the recipe..

 

Paneer Sandwich My Magic Pan

 

[Preparation Time-15 mins : Cooking Time- 15 mins ]

Paneer Sandwich Ingredients:

For the filling:

  • Paneer – 1/2 cup
  • Onion – 1
  • Capsicum – 1 to 1& 1/2 ( I used 1/2 of each colour)
  • Jeera/Cumin seeds – 1 tsp
  • Chilli powder – 1 tsp
  • Coriander Powder – 2 tsp
  • Salt – as needed
  • Oil – 1 tbsp

For the sandwich:

  • Bread – 8 slices ( I used seeded whole wheat bread)
  • Green Chutney – as needed
  • Cheese – as needed
  • Butter – to smear

Method:

Lets get the stuffing ready first.

  • Heat a pan with oil and add cumin seeds. Add chopped onion and saute until translucent. Add chopped capsicum and mix well.

 

  • Add salt, chilli powder, coriander powder & turmeric powder. Mix well and cook until it is soft yet crunchy. Now add grated/crumbled paneer to it and mix well. Thats it. Stuffing is ready.

 

  • Take 2 bread slices and smear green chutney on it. This step is totally optional. Spread the paneer capsicum stuffing on it.

 

  • Top it with some grated cheese. Cover it with another slice of bread.

 

  • Smear some butter on the top of the slice and grill it in a sandwich maker until golden brown and crisp on top. Flip on both the sides so that it is evenly crisp on both the sides.

 

 

Thats it! Paneer Sandwich is ready!

Cut it into halves and serve hot!

Tips:

  1. I have used store bought paneer. So grated it and used. U can crumble homemade paneer and use.
  2. Using green chutney is optional. U can use tomato ketchup too.
  3. Greasing with butter gives a nice brown and crispy texture.
