Paneer Makhani

Paneer is always considered as a special dish as far as our family is concerned. Am sure it would be the same for all vegetarians. This Paneer Makhani is an easy and simple side dish that goes well with roti, naan or pulao varieties. Paneer is cooked in a thick and rich tomato-cashew base gravy. Without onions, this Paneer Makhani really stands out when compared to the usual Paneer Butter Masala or Shahi Paneer.

Now to the recipe..

[Preparation Time – 10 mins : Cooking Time- 30 mins]

Ingredients:

  • Paneer – 1 cup (cubed)
  • Tomato – 3 (small)
  • Butter – 3 tbsp
  • Ginger-garlic paste – 1 tsp
  • Green chilly – 2
  • Chilli powder – 1 tsp
  • Salt – as needed
  • Sugar – 1 tsp
  • Garam Masala – 1/2 tsp
  • Cardamom – 2
  • Cloves – 2
  • Kasoori Methi – a generous pinch
  • Cashew – 10 to 12

Method:

  • Wash and chop tomatoes roughly. Blend them in a mixer into a puree. Meanwhile heat a pan with butter.

  • Add the cloves and cardamom. Once u get a nice aroma, add the ginger-garlic paste. Saute until the raw smell goes away. Add the tomato puree, required salt, chilli powder and slit green chillies. Mix well and let it cook in low-medium flame.

  • Meanwhile cube the paneer and keep it ready. Saute the tomato puree until oil oozes out in the sides. At this stage add sugar and kasoori methi.

  • Add required water and the cubed paneer pieces. Add cashew paste to it. Mix well and cook for a couple of mins. Finally add the garam masala powder and cook for a few more mins. Switch off the flame.

Thats it!! Paneer Makhani is ready!!

Serve hot with roti or pulao!!

Tips:

  1. Choose red and ripe tomatoes to make the gravy.
  2. Adding sugar helps in reducing the sourness of the tomatoes. U can increase or decrease the amount accordingly. U can add honey instead too.
  3. Adding cashew paste gives a rich taste to the Paneer Makhani. U can substitute it with fresh cream as well.
