Paal Kesari – Milk Kesari – Kesari Using Milk

Paal Kesari or Milk Kesari is a simple South Indian sweet. I made this for the 1st day of Navaratri (today). Perfect for this festive season and for sudden cravings/guests. It is very similar to the normal Rava Kesari. The addition of milk gives it a magical taste. It tasted more like a halwa! The needed ingredients are always available at home. Paal Kesari My Magic Pan

 

[Preparation Time-5 mins : Cooking Time- 20 mins]

Paal Kesari Ingredients:

  • Rava – 1/2 cup
  • Milk – 1 & 1/2 cups
  • Sugar – 1 cup
  • Cardamom powder – a pinch
  • Yellow food colour – as needed
  • Ghee – 4 to 5 tbsp
  • Cashew nuts – 8 to 10

Method:

  • Heat a pan with ghee and roast the cashews until golden brown. Keep it aside. In the same pan, add rava and roast it until u get a nice aroma. Keep it aside.

  

  • Add milk to the pan and bring it to a boil. Now add the roasted rava, stirring continuously. Make sure there are no lumps. It will become thick and cooked. Now add the sugar to it.

  

  • It will become watery first and thicken over time. Now add the elaichi powder, food colour (if using) & the roasted cashews. Mix well and cook for a couple of minutes until it starts leaving the sides of the pan.

Thats it! Yummy and divine Paal Kesari is ready!

Tips:

  1. Ratio for Rava:Sugar is 1:2 U can reduce it if u want.
  2. Make sure that the rava is cooked well before adding the sugar.
  3. Stirring continuously is the main point to get a lump free and smooth texture.
  4. The Milk Kesari thickens over time, so switch off accordingly.
  5. u can add a little more ghee than mentioned above for extra richness.
