Mundhiri Murukku – Cashewnut Murukku

Murukku or any savoury snack is Chotu’s favourite!! This Mundhiri Murukku has become his latest favourite.  It is a very easy and quick to make snack with simple ingredients usually available in the kitchen. Do check out my Murukku & Payatham Mavu Murukku recipes posted earlier. This Mundhiri Murukku has a rich and unique taste. Is it not the best savoury snack to enjoy it for Diwali?!?

[Preparation Time-10 mins : Cooking Time- 30 mins]

Ingredients:

  • Rice Flour – 2 cups
  • Cashewnuts – 20
  • Butter / Ghee – 1 tbsp
  • Sesame Seeds – 1 tbsp
  • Asafoetida – a generous pinch
  • Salt – as needed
  • Oil – to deep fry

Method:

  • Soak cashews in little water for 10-15 mins. Grind it into a smooth paste. Make sure there are no tiny bits. Take a wide bowl and add rice flour, salt, butter, asafoetida and sesame seeds. Mix well so that the butter is evenly mixed.

  • Now add the cashew paste and enough water to make a soft dough. Grease the murukku press with little oil and add a batch of the dough in it. I used the single star press. Meanwhile heat oil in a pan to deep fry.

  • Make round shaped murukku in a ladle and trasfer it carefully to the hot oil. When the sizzling sound starts subsiding, take it off and drain in a kitchen towel. Repeat the process for the rest of the dough.

Thats it!! Crispy Mundhiri Murukku is ready!!

Store them in an airtight container.

Tips:

  1. Ensure oil is hot when u deep fry. Fry it in medium flame always. Else it will get burnt and spoil the taste.
  2. U can use the 3 stars shaped achu and press it like thenguzhal.
  3. If the dough is not in the right consistency u will not be able to get perfect swirls. It will break in between. Sprinkle some water, knead the dough and then proceed if it is too dry.
  4. U can add 1/4 cup of urad dal flour too. I did not add as I wanted the unique flavour of cashew in it.
