Lemon Rice – Rice Varieties

Lemon Rice is a very common and popular South Indian rice variety. It is an easy and quick lunch box recipe. All u need is rice, lemon juice and tempering. I pretty much told the recipe here. Actually this is not a fancy recipe to be published here, but there are many beginners/bachelors who really need this. My favourite among these rice varieties is Puliyotharai especially with home made Pulikaichal. This Lemon Rice is good to go as is or divine with any potato sabji & papad/crisps.

Now to the recipe..

 

Lemon Rice My Magic Pan

 

[Preparation Time-5 mins : Cooking Time- 20 mins]

Lemon Rice Ingredients:

  • Rice – 1 cup
  • Lemon – 1 (medium sized)
  • Oil – 1 tbsp + 1 tsp
  • Mustard – 1 tsp
  • Urad Dal – 1 tsp
  • Cashews – few (optional)
  • Curry leaves – few
  • Dry red chilli – 1
  • Green chilli – 1
  • Turmeric powder – 1/4 tsp
  • Salt – as needed

Method:

  • Cook rice in a pressure cooker so that each grain is separate. It should not be mushy. Take the cooked rice in a wide bowl and spread it. Add a tsp of oil, salt and let it cool down a bit. Heat a pan with oil and temper with mustard, urad dal, cashews, curry leaves, slit green chilli and red chilli. Finally add the turmeric powder and mix.

  • Add 1/4 cup of water and let it come to a boil. Add the cooked rice to the mixture and mix well. Check for salt and switch off the flame. Finally add the lemon juice & mix so that the flavour blends well with the rice.

Thats it!! Quick and easy Lemon Rice is ready!!

Serve hot with potato curry.

Tips:

  1. I have used basmati rice here, u can use normal rice.
  2. Make sure to add the lemon juice after switching off the flame. Else it might turn bitter.
  3. U can add peanuts, chana dal and finely chopped ginger while tempering too.
  4. Lemon Rice needs some resting time for the flavour to blend in well. It would be perfect if made in the morning & packed for lunch.
