Homemade Sambar Powder – Sambar Podi

Sambar is a must in every South Indian household. This post is about Homemade Sambar Powder / Sambar Podi.. Am sure all of u will agree that homemade is the best and nothing can beat this freshly ground homemade sambar powder. I use it to make Sambar, kootu,poriyal and vatha kuzhambu too. It is a universal powder. Everyone has their own version and this is Amma’s recipe. I always bring a batch from home whenever we go to India.

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Red Chillies – 2 1/2 to 3 cups
  • Coriander Seeds – 1 cup
  • Toor Dal – 1/2 cup
  • Jeera/Cumin Seeds – 1/2 cup
  • Rice – handful
  • Fenugreek Seeds – 2 tsps
  • Pepper Corns – 3 tsp

Method:

  • Heat a pan and dry roast red chillies in low flame until they turn slightly brown. Keep it aside. Then dry roast coriander seeds until u get a nice aroma. Keep it aside. Next dry roast toor dal until slightly brown.

  • Similarly dry roast jeera, pepper corns, fenugreek seeds separately and keep it aside.

  • Finally roast the rice and keep it aside. Let all the ingredients cool completely.Once cooled, first take the red chillies and grind it coarsely.

  • Once u grind the red chillies coarsely, add the rest of the ingredients and grind it to a fine powder.

Let the sambar powder cool for some time and store it in an air tight container.

Freshly ground homemade sambar powder is ready.

Tips:

  1. U can sun dry the ingredients for 6-7 hours and grind it in a mill if available. I dont have both the facilities so I make it at home as mentioned above.
  2. Make sure not to burn the ingredients while roasting. Else it will spoil the taste of sambar.
  3. Use a clean, dry spoon to handle the sambar powder.
  4. Cool the sambar powder once u grind it by spreading it in a newspaper and then store it in an airtight container.
  5. Adjust red chillies according to your spice levels.

    Normally we use kadala paruppu instead of toor dhal in sambar powder since kadala paruppu acts as a thickening agent. Any how cooked toor dhal is a must in sambar. kindly clarify.

      I have used rice as a thickening agent in my sambar powder. U can skip that and add 1/4 cup of chana dal for the above measurements too. Toor dal gives a unique flavour. I would recommend not to skip that.
