Eggless Custard Cookies

These eggless custard cookies are very simple cookies made with a flavour of custard powder and all purpose flour. Its a very simple & quick cookie recipe as the cookie dough need not be refrigerated. Just mix all the ingredients and bake. Is it not simple enough?? So treat your kids with these melt in the mouth eggless custard cookies.

[Preparation Time-10 mins : Cooking Time- 15 to 20 mins]

Ingredients:

  • All purpose flour – 1 1/2 cups
  • Custard powder – 1/2 cup
  • Icing Sugar(powdered sugar) – 1/2 cup
  • Sugar – 1tbsp
  • Unsalted Butter – 1 cup
  • Milk or Water – 2 to 3 tbsp (If required – See tips)

Method:

  • Take butter & icing sugar in a bowl and beat it well so that it is smooth & creamy. Make sure butter is in room temperature/soft & there are no lumps in sugar. Now sift in the all purpose flour & custard powder and mix gently.

  • Make a smooth dough. Do not knead the dough too much. Else the cookies will turn hard. Pinch a small ball sized dough and make it into a smooth round ball. Meanwhile pre-heat your oven to 180 deg C for 10 mins.

  • Take a tbsp of sugar in a plate and roll the cookie dough in it so that the sugar sticks on all sides. Line a baking tray with parchment paper and place the cookie dough balls on it. Press it gently with a fork to form marks.

  • Now bake the eggless custard cookies in batches for 10-12 mins or until the cookies turn slightly golden in the edges. Once baked, cool them on a wire rack.

Eggless Custard Cookies are ready.

Let them cool down completely and then transfer to air tight containers.

Tips:

  1. Baking time depends upon the size & thickness of the cookies.
  2. In step 2 – U can add a few tbsp of milk or water to the dough if u are not able to bring them together.
  3. The cookies will look soft when hot, but will be crispy once they cool down. So do not overbake.
  4. Rolling the cookie dough in sugar is optional. It gives a nice crunchy texture on the outside. U can skip it too.
  5. U can use wheat flour instead of all purpose flour or even half & half.
  6. U can use any flavour of custard powder – I used vanilla flavour.

      Thank u 🙂 U can bake the cookies in microwave convection mode. Temperature and time remains the same as mentioned in the recipe above..
