Eggless Coffee Walnut Mug Cake

I love mug cakes. My Banana Cinnamon Mug Cake turned out to be a super-hit!! This is my second attempt in trying mug cakes. This Coffee Walnut Mug Cake is an easy, soft and moist cake that can be made in a couple of mins. If u are a coffee lover, this is perfect for you!! This can be served as a breakfast or a sweet treat for sudden cravings!! For me baking is like working in a Chemistry lab, especially if I have to make it on my own . I kept my Banana Cinnamon Mug Cake recipe as a base and arrived at this recipe. Really very happy to have made a cake on my own, or rather my own measurements 

 

Now to the recipe…

[Preparation Time-5 mins : Microwaving Time- 2 mins]

Ingredients:

  • Milk – 5 tbsp
  • Oil – 2 tbsp
  • Coffee powder – 2 tsp (see tips)
  • Powdered Sugar – 4 tbsp
  • All purpose flour – 4 tbsp
  • Baking powder – 1/4 tsp
  • Baking Soda – 1/8 tsp
  • Walnut (chopped) – 1 tbsp

Method:

  • Take a microwave safe cup. Add milk and oil. Mix well. To this add coffee powder, powdered sugar, all purpose flour, baking powder and baking soda.

  • Mix well so that there are no lumps. Finally add chopped walnuts and mix well. Reserve some to garnish. Microwave for 2 mins or until an inserted tooth pick comes out clean.

Thats it!! Coffee Walnut Mug Cake is ready!!

Tips:

  1. I have used 2 tsp of coffee powder. If u feel it is too strong u can reduce it.
  2. U can prepare coffee with the above measurements of milk, sugar powder and coffee powder and use it instead of adding separately.
  3. U can add/reduce powdered sugar according to your taste buds. It was medium sweet with the above measurements.
  4. I have used sunflower oil. U can use canola, vegetable oil or melted butter.
  5. I have not greased the mug before baking, just enjoyed the Coffee Walnut Mug Cake as is in the mug. If u want to serve it separately, grease the mug with a little oil and then bake.
  6. This Coffee Walnut Mug Cake took 2 mins in my microwave (850 watts). Timings may vary based on the power of your microwave.
  7. Do not over-bake the cake. Else it will become hard and rubbery.
  8. This cake will rise while baking, but will not overflow. Get an idea from the picture to see how much u can fill in a mug before baking.
  9. It might look sticky when hot, let it cool for a while and enjoy!!
