Eggless Chocolate Chip Muffins

Eggless Chocolate Chip Muffins are quick, easy & delicious. They are moist, spongy & packed full of chocolate that kids would love to grab anytime. Perfect for a picnic, or your kids lunchbox or as a tea time snack.

I would say – this is the easiest muffin recipe ever – Just mix the dry & wet ingredients, bake for 15 mins.

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • All purpose flour – 2 cup minus 2tbsp (see tips)
  • Baking powder – 1 tbsp
  • Salt – 1/2 tsp
  • Choc Chips – 1 cup
  • Milk – 3/4 cup
  • Melted Butter – 1/2 cup
  • Yogurt/Curd – 1/4 cup
  • Vanilla Extract – 1 tsp
  • Sugar – 1/3 cup
  • Brown Sugar – 1/3 cup

Method:

  • Preheat your oven to 200 deg C. Line a muffin tray with muffin liners. Take the choc chips and add 2 tbsp of all purpose flour. Mix well and keep this aside. In a wide bowl mix together melted butter, milk, yogurt, vanilla essence & both the sugars. Mix well so that the ingredients are combined.To the wet mixture sieve the all purpose flour, salt & baking powder.

  • Mix with light hands so the it combines to form a batter. Fold in the choc chips and mix gently. It will be in the form of a thick batter.

  • Scoop in the batter into each muffin liner upto 3/4 level. Bake for 15-18 mins. Make sure to check with a tooth pick – should come out clean when inserted. Once baked, cool them on a wire rack before storing it.

Eggless Chocolate Chip Muffins are ready.

Serve as a tea time snack or for any kids parties.

Tips:

  1. Do not skip to mix 2 tbsp of flour to the choc chips. This way they will spread evenly through the chocolate chip muffins. Else the choc chips will sink to the bottom of the muffin.
  2. I have used a combo of sugar & brown sugar. U can skip brown sugar and use normal sugar fully.
  3. When mixing the wet ingredients use a whisk and switch to a spatula after adding choc chips. If u over mix the batter the muffins will not be soft & spongy.
  4. Before baking u can top the batter with a few extra choc chips too.
  5. Adding curd gives a really moist texture to the muffins. So do not skip curd.
  6. With the above measurements, it yielded around 20 muffins.

    I am making them today and i am really excited because the pictures here intrigued me to bake them, so today was the day! They are in the oven and they look adorable since i am making them in the mini muffin tins, I love them. I also added in banana to make it banana choc chip muffins since there were no other recipes out there as simple and astonishing as this one.
