Cluster Beans Paruppu Usili – Kothavarangai Paruppu Usili

Kothavarangai Paruppu Usili is a popular South Indian side dish made with kothavarangai/cluster beans and lentils. It is mostly served in South Indian marriages. This can be made with beans too..

Though my family is not a big fan of Cluster Beans, we like this Kothavarangai Paruppu Usili very much. My favourite combo is with hot steamed rice & Mor Kuzhambu or Rasam.

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Kothavarangai/Cluster Beans – 1/4 kg
  • Chana Dal – 1/4 cup
  • Dry Red Chilly – 2
  • Oil – 2 tbsp
  • Mustard – 1 tsp
  • Urad Dal – 1 .5 tsp
  • Curry leaves – a sprig
  • Asafoetida – a generous pinch
  • Coconut – 1 tsp (optional)
  • Turmeric powder – a pinch
  • Salt – as needed

Method:

  • Soak Chana dal in enough water for atleast for one hour. Wash and trim the edges of cluster beans. Chop them into small pieces. Cook it in a vessel with enough water by adding salt & turmeric powder. Once it gets cooked (becomes soft), drain the excess water and keep it aside.

  • Drain any excess water from the soaked chana dal and grind it along with red chilly into a coarse paste. Keep this ready. Heat a pan with oil and temper with mustard, urad dal, curry leaves and asafoetida. Add the coarsely ground paste and required salt for it and saute. (See tips)

  • Saute it until the dal mixture gets cooked and is golden brown. It should look crumbled. Now add the cooked cluster beans and mix. Check for salt. Finally add grated coconut(if using) and saute. Switch off the flame.

Delicious Kothavarangai Paruppu Usili is ready.

Serve it with hot steamed rice and kuzhambu of your choice.

Tips:

  1. Make sure to add salt carefully, as we are adding it in 2 stages. One while cooking the veggie and the second for the dal mixture. So add accordingly.
  2. Grind the chana dal coarsely, else u will not get the right texture.
  3. Do not add much water while grinding, 1 or 2 tbsp will be fine just to make grinding easy.
  4. U can alternatively steam the dal mixture in a steamer and add it after tempering too.
