Chocolate Cupcake – Cream Cheese Frosting

Cupcakes are ideal for any parties or celebrations. This Chocolate Cupcake is very moist and spongy. Making cream cheese frosting had been in my to-do list since a very long time. I tried this combo of Choc Cupcake with Cream Cheese Frosting and it was a super-hit at home. Click here if u want to frost your cupcake with Butter Cream Frosting.

Chotu who does not have a sweet tooth simply loved it!! So here u go with another Valentine’s Day special recipe…  Recipe adapted from Laura’s Kitchen.

Chocolate Cupcake My Magic Pan

[Preparation Time-15 mins : Baking Time- 15 to 18 mins]

Chocolate Cupcake Ingredients:

For the Choc Cupcakes:

  • All Purpose Flour – 1 1/4  cups
  • Cocoa Powder – 1/4 cup
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/2 tsp
  • Salt – 1/4 tsp
  • Unsalted Butter – 1/4 cup
  • Sugar – 3/4 cup
  • Buttermilk – 3/4 cup
  • Egg – 1
  • Vanilla Extract- 1 tsp

For the Cream Cheese Frosting:

  • Cream Cheese – 1 cup
  • Powdered Sugar – 3/4 cup
  • Unsalted Butter – 2 tbsp
  • Vanilla Extract – 1 tsp

Method:

  • Pre-heat your oven to 180 deg Celsius. Take a wide bowl and add butter and sugar. Cream them together with a hand mixer. U can also do this manually with a whisk. Now add the egg and vanilla extract and whisk until smooth. Meanwhile mix all purpose flour, cocoa powder, baking powder, baking soda and salt in a bowl and keep it ready. Add the dry ingredient mixture and buttermilk in 2 parts.

  • Mix all the ingredients until just well combined. Make sure there are no lumps. Line a muffin tray with muffin liners. Scoop in the batter and fill in the muffin tray. Bake for 15 to 18 min or until an inserted toothpick comes out clean. Once baked cool completely before frosting them.

Choc Cupcakes are ready!!

Lets get ready with the cream cheese frosting!!

  • Take all the ingredients mentioned for the cream cheese frosting in a wide bowl and whisk until well combined. Continue to whip till it is thick enough to pipe. Scoop the frosting in a disposable bag and top your cupcakes. I added a few sprinkles to attract Chotu

Tips:

  1. For the cupcakes u can increase the amount of cocoa powder if u want. With the above measurements it will give a mild flavoured choc cupcake.
  2. For the frosting adjust the amount of sugar as per your taste buds. U can increase or decrease. Feel free to lick in between to taste 
  3. U can add 1 or 2 tbsps of milk for a thinner version of frosting.
  4. Top your Choc Cupcake with any sprinkles of your choice.
