Choc Chip Shortbread

Shortbread is our family favourite. This Choc Chip Shortbread is incredibly rich & tasty! Trust me they are so easy to make. U just have to mix together a few ingredients, make a simple dough out of it, bake it and cool it.. Thats it!! Yummy, buttery, crunchy Choc Chip Shortbread would be ready in no time. I got this recipe from a cook book, the same one from which I tried the Coffee Walnut Brownies.

[Preparation Time-10 mins : Cooking Time- 35 to 40 mins]

Ingredients:

  • All purpose flour/Maida – 1/2 cup
  • Corn Flour – 1/4 cup
  • Sugar – 1/4 cup ( I used half and half of brown sugar)
  • Butter – 1/2 cup
  • Chocolate Chip – 1/4 cup or less
  • Salt – 1/4 tsp

Method:

  • Pre-heat your oven to 160 deg Celsius. Take a baking tray and grease it with butter/non stick spray and line it with a baking sheet. Sieve the plain flour and corn flour into a wide bowl. Add salt & both the sugars (if using brown sugar) and mix well. To this add melted butter and mix.

  • Just mix the ingredients to form a dough. Do not over mix. Add the shortbread dough to the greased/lined pan. Press it lightly with your hands so that it is even on all sides.

  • Prick the surface randomly with a fork. Sprinkle the chocolate chips and gently press it down so that it sticks to the dough. Bake it in the pre-heated oven for 35-40 mins or until the choc chip shortbread is cooked and set. Cut it into wedges when its still warm.

  • Let it cool completely on a wire rack and store in an air-tight container.

 

Choc Chip Shortbread is ready!!

Tips:

  1. Using brown sugar is purely optional. U can use normal granulated sugar alone. It will taste good too.
  2. I have used unsalted butter. If u are using salted butter , skip the salt as mentioned above.
  3. Just mix the ingredients to combine well, u dont have to work out your muscles 🙂
  4. Pricking the surface with a fork helps in uniform baking.
  5. U can use as much or less of choc chips as per your taste.
  6. Slice the choc chip shortbread when its still warm, else it will be difficult to cut them.
