As winter has started we definitely need some soups or snacks recipes to cope with the weather. This Cheese Rice Balls is a damn easy and tempting recipe made with left over rice, good amount of veggies and cheese. This was a super hit at home. Am sure it will not only impress the kids but the adults too. However carefully I cook, I will be left with some rice. So this is a perfect way to use it up. Agree?!? Recipe with video 🙂

Cheese Rice Balls My Magic Pan

[Preparation Time-10 mins : Cooking Time- 15 mins]

Cheese Rice Balls Ingredients:

  • Cooked Rice – 1/2 cup
  • Onion – 1 small
  • Capsicum – 1/2
  • Carrot – 1 (grated)
  • Cheese – 1/4 cup (I used cheddar cheese)
  • Salt – as needed
  • Chilli powder – 1 tsp
  • Chaat masala powder – 1/8 tsp
  • Maida – 1 tbsp
  • Oil – to fry

Method:

  • Mash the cooked rice with a fork. I just microwaved it for a minute so that it would be easy to mash. Add finely chopped onion, capsicum, grated carrot and cheese.

  • Now add required salt, chilli powder, chaat masala powder and maida. Mix well with your hands to make a dough.

  • Pinch a small piece of the dough and make a small ball. U can grease your hands with oil if needed. Repeat for the rest of the dough. Keep all the balls ready. Drop a batch (say 4 to 5 balls) in hot oil.

  • Flip and cook evenly on all sides until golden brown. Keep the flame in medium always. Drain it in paper towels.

Thats it!! Crispy Cheese Rice Balls are ready!!

Serve hot with a cup of tea or coffee!!

Tips:

  1. I have used left over rice. U can use fresh rice too. Make sure the rice is cooked properly and there is not much moisture in it.
  2. If using rice that has been kept in the fridge, sprinkle some water and steam it in a pressure cooker for few mins without the whistle. I just microwaved it for a minute. This way it will be easy to mash the rice.
  3. I have not added water to make the dough. If u find the mixture to be very thick sprinkle a few tsps of water, if it is watery add more maida.
  4. If at all the rice balls spilt in the oil while frying, add more maida or corn flour to the dough and then proceed.
  5. After mixing all the ingredients, make the Cheese Rice Balls immediately. Else the mixture will become watery.
  6. Always cook in medium flame so that it is cooked evenly, else it will be crispy outside and uncooked inside.
  7. Instead of adding grated cheese, u can stuff the rice balls with cheese cubes and fry too.
