Coconut Rice is a simple and yummy lunch box rice variety. It can be made in just 15 to 20 mins. Not much cooking skills are needed to make this. In the sense, it is perfect for bachelors. Am not a big fan of variety rice, but once in a while I like to have it. Puliyodharai is an exception though! Coconut Rice and potato fry is an unbeatable combo! In fact I would say it is the default combo at home :) Finally not to forget that this Coconut Rice tastes very flavourful when made with freshly grated coconut.

Lemon Rice is a very common and popular South Indian rice variety. It is an easy and quick lunch box recipe. All u need is rice, lemon juice and tempering. I pretty much told the recipe here. Actually this is not a fancy recipe to be published here, but there are many beginners/bachelors who really need this. My favourite among these rice varieties is Puliyotharai especially with home made Pulikaichal. This Lemon Rice is good to go as is or divine with any potato sabji & papad/crisps.

I love Biryani, especially Paneer Biryani. It is a festive meal for almost all vegetarians. This Paneer Biryani is a simple one pot meal made in a pressure cooker. Unlike the normal Veg Biryani there is not much chopping work or grinding involved here. The only step that u have to plan ahead is to marinate the paneer. I usually make Biryani during weekends. It is an easy lunch box option to make during weekdays too.

Biryani is always a breeze to make. We love one pot meals, especially during travel or for those busy days. This Baby Potato Biryani is a flavourful biryani with baby potatoes. I saw this recipe in a cook book and made a few changes to suit our taste buds. This is yet another biryani made easily in a pressure cooker. All u need to do is marinate the baby potatoes and then the rest of the procedure can be done quickly. Baby potatoes are always a favourite and will be in my shopping list! I simply love the cuteness of the tiny potatoes.

Veg Pulao is yet another easy and quick one pot meal recipe. Its a good blend of mixed veggies and rice. This goes well any gravy kind of side dish. My personal favourite would be Paneer Butter Masala, Kadai Paneer … But this time I served with Dum Aloo (recipe coming soon). Its a perfect lunch box menu too. I usually make this when we do not want to have the usual rice, kuzhambu and veggie combo. This is a good alternative to it and super quick to make!!
