Carrot Halwa

Carrot Halwa or Gajar Halwa is a popular Indian dessert made with carrots, milk & ghee. There are many versions of making it. This version is a very simple & quick one that can be made in a jiffy in a microwave. This is a NO FAIL recipe with very less ingredients.

[Preparation Time-10 mins : Cooking Time- 15 mins]

Ingredients:

  • Carrots – 2 cups (grated)
  • Evaporated milk – 1 1/2 cups (1 can)
  • Sugar – 1/2 cup
  • Ghee – 2 tbsp
  • Cardamom powder – a pinch
  • Almonds & Pistachios – a few

Method:

  • Wash, peel & grate carrots. Take a wide, microwave safe bowl & add ghee. Add the grated carrots and mix. Microwave high for 2 mins. This is to get rid of the raw smell of carrots.

  • Add evaporated milk and mix well. Microwave high for 5 mins, stirring in often. The carrots will become soft now.

  • Add in the sugar & mix well. Microwave high for 8-10 mins. By this time the carrots would absorb all the evaporated milk & sugar and become thick. Finally add cardamom powder & mix.

That’s it. Quick carrot halwa is ready.

Garnish with chopped almonds & pistachios. Serve hot or cold.

Tips:

  • U can increase or decrease the amount of sugar according to your taste buds.
  • U can substitute evaporated milk with normal milk or condensed milk. If using normal milk – It will take a longer time to make the carrot halwa though, If using condensed milk – Skip the sugar.
  • U can add khoya/mawa for an extra rich flavour.
  • U can garnish with cashews & raisins too.
  • Cooking time may vary depending upon your microwave power. So keep an eye always.
