Carrot Halwa is an all time favourite. It is a divine treat when served warm on a winter day! Yumm!! I love it when made with Delhi carrots. Was so happy and surprised to see them here during last week’s shopping as it is hardly available here. All we get are those English carrots. The red colour of Delhi carrots is so attractive. So it is so obvious that I made this Carrot Halwa. I have already posted a microwave version of this Halwa earlier. Check it HERE. Carrot Halwa My Magic Pan

 

[Preparation Time-15 mins : Cooking Time- 45 mins ]

Carrot Halwa Ingredients:

  • Carrots – 4 nos or 2 cups when grated.
  • Milk – 2 cups
  • Sugar – 3/4th cup
  • Ghee – 4 tbsp
  • Cardamom powder – a generous pinch
  • Cashews – 10

Method:

  • Wash the carrots and chop both the ends. Peel it with a peeler and grate it. I used the bigger slot for grating it.

  

  • Heat a pan and add 2 tbsp of ghee. Add the grated carrots and saute for a few mins. It will change colour and the raw smell will go off.

  

  • Add 2 cups of boiled milk to the carrots. Mix well and cook over low-medium flame until the milk evaporates and the carrots are cooked well. This will take about 25-30 mins.

  

  • Add sugar to it. It will become watery first and then thicken in a few minutes. Add cashews, remaining ghee & cardamom powder. Mix well and cook for a minute and switch off the flame.

  

 

Thats it! Carrot Halwa is ready!

Serve warm or cold.

Tips:

  1. Adjust sugar according to your preference.
  2. U can pressure cook the grated carrots for 2-3 whistles, but cooking it over low-medium flame makes it more tastier.
  3. Saute the carrots for a couple of mins to get rid of the raw smell before adding the milk.
