Capsicum Rice – Capsicum Masala Rice

Rice varieties are always a breeze to make, perfect for lunch box. This Capsicum Rice is a simple and flavourful rice variety. I saw this in a tv show and tweaked it a bit to suit our taste buds. If u have cooked rice ready, this Capsicum Rice can be made in a jiffy. So this can be also made with left-over rice. It does not need any side dish as such, a simple raita would do.

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Basmati Rice – 1 cup
  • Capsicum/Bell Pepper – 1 cup (I used 1 capsicum each of green and yellow)
  • Onion – 2
  • Mustard – 1 tsp
  • Jeera/Cumin seeds – 1/2 tsp
  • Oil – 3 tbsp
  • Salt – as needed

For the Masala Powder:

  • Red Chillies – 3 to 4
  • Coriander seeds – 1.5 tbsp
  • Chana Dal – 1 tbsp
  • Jeera – 1 tsp
  • Pepper – 5 to 6
  • Urad Dal – 1 tsp
  • Peanuts – 1 tbsp

Method:

  • Take basmati rice and wash it once. Add 1 1/4 cups of water and pressure cook for 1 whistle and simmer it for 5 mins. Switch off the flame.

  • Heat a pan and dry roast all the ingredients mentioned under ” Masala Powder” until light brown and u get a nice aroma. Let it cool down and grind it into a coarse powder.

  • Heat a pan with oil and temper with mustard and cumin seeds. To this add sliced onions and saute until transparent. Now add sliced capsicum and saute until soft yet crunchy. Now add the ground masala powder.

  • Add salt and mix well. Finally add the cooked rice and mix it with light hands so that all the flavours blend well.

Thats it!! Flavourful and yummy Capsicum Rice is ready!!

Tips:

  1. I have used Basmati Rice. U can use normal rice too.
  2. While dry roasting for the masala powder, u can add whole spices like cloves, cinnamon, elaichi. Or instead u can add a tsp of garam masala powder too.
  3. U can skip peanuts if u dont prefer the nutty flavour and add cashews instead.
