Cabbage Rice – Rice Varieties

Cabbage Rice is an easy and simple rice variety perfect for lunch box. It is very flavourful and quick to make as well. Thinking of a menu for lunch box or for kids is always a struggle. This is very apt for both. Dont know how I missed to post this here as this is a favourite at home. My mom makes this quite often. U can make good use of left over rice too. This Cabbage Rice and a simple raita will be a complete meal.

Cabbage Rice My Magic Pan

 

[Preparation Time-20 mins : Cooking Time- 30 mins]

Cabbage Rice Ingredients:

  • Rice – 1 & 1/2 cup (cooked – I used basmati rice)
  • Cabbage – 2 (medium sized)
  • Onion – 1
  • Ginger – 1 inch pc
  • Oil – 3 tbsp + 1 tbsp
  • Cashews – few (optional)
  • Mustard – 1 tsp
  • Urad Dal – 1 tsp
  • Salt – as needed
  • Chilli powder – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Garam Masala – 1/2 tsp
  • Coriander leaves – few

Method:

  • Heat a pan with oil and add finely chopped ginger and sliced onion. Saute until it turns translucent. Meanwhile cook rice and keep it ready.

 

  • Add chopped/cleaned cabbage to it followed by salt, chilli powder & turmeric powder. Mix well and cook covered.

 

  • Once the cabbage is cooked soft, add the garam masala. Saute for a minute until the raw smell goes off. To this add cooked rice. U can switch off and mix the rice.

 

  • Mix well gently (without breaking the rice too much) so that all the flavours blend well. Heat a pan with oil and roast cashews (if using). Keep it aside and in the same oil temper mustard and urad dal. Add all this and coriander leaves to the mixed rice.

 

 

Thats it! Simple yet yummy Cabbage Rice is ready!

Enjoy with a simple raita.

 

 

Tips:

  1. U can use fresh rice or left over rice. Both work well.
  2. Skip onions for a no-onion no-garlic version.
  3. I always add ginger while making cabbage. It gives a nice flavour.
  4. U can skip cashewnuts and add roasted peanuts.
