Bread Cutlet – Cutlet Recipe

I love cutlets, be it with mixed vegetables or just with potato. Wanted to try something different and made this Bread Cutlet. The actual reason was I had some left-over bread that was about to expire 😉 I did make good use of them and it was a super hit 🙂 This bread cutlet was crispy outside and soft inside. Additionally to look attractive I made them in shapes specially for Valentines Day
Now to the recipe…
[Preparation Time-10 mins : Cooking Time- 20 mins]
Ingredients:
- Bread slices – 4 to 6
- Potato – 1
- Curd – 2 tbsp
- Ginger – 1 inch piece
- Crushed nuts – 2 tbsp ( I used blanched almonds)
- Sooji/Rava – 1 tbsp + 3 tbsp
- Salt – as needed
- Chilli powder – 3/4th tsp
- Coriander leaves – few
- Oil – to shallow fry
Method:
- Chop the bread slices into cubes and take it in a wide bowl. To this add crushed nuts, boiled and mashed potato, curd, salt, chilli powder, 1 tbsp sooji, finely chopped ginger and coriander leaves. Mix with light hands to combine well and form a dough.
- Grease your work table and heart shaped mould with some oil. I used my cookie cutter as a mould. Pinch a small ball sized dough and press it in the mould. Take off the mould to get heart shaped cutlets. Coat it with sooji/rava and keep them ready.
- Heat a pan with oil enough to shallow fry. Carefully drop the coated bread cutlets in medium hot oil. Flip the other side so that it fries evenly on all sides. Remove from oil when golden brown and drain it in paper towels.
Thats it!! Crunchy bread cutlet is ready!!
Serve hot with ketchup..
Tips:
- U can add finely chopped onions, green chilies and any vegetable of your choice. If using grate and saute them until dry and then make cutlets.
- Potato acts as a binding agent, so do not skip it.
- U can use any nuts of your choice or skip it if u dont like. We just loved biting into tiny bits of nuts everytime.
- Make sure to fry in medium hot oil, else it will not get cooked inside.
- I have used sooji/rava to coat the bread cutlet. U can use bread crumbs too.
- U can shape them as rounds, or flatten them like vadas. What ever be the shape they just taste yummy!!
