Besanwali Bhindi – Besan Bhindi Fry

Bhindi / ladiesfinger is Chotu’ favourite  I used to make the Stuffed Bhindi Masala quite often earlier. But when I am pressed for time on busy mornings I make this Besan Bhindi Fry. Ever since I started making this Besanwali Bhindi Chotu is driving me crazy, asking for this sabji atleast twice a week   This is a simple yet lip-smacking sabzi that goes well with roti or rice.

Now to the recipe….

[Preparation Time-15 mins : Cooking Time- 25 mins]

Ingredients:

  • Bhindi/Ladiesfinger – 1/4 kg
  • Onion – 2
  • Chilli powder – 1 tsp
  • Coriander powder – 2 tsp
  • Turmeric powder – 1/4 tsp
  • Salt – as required
  • Besan/Chickpea Flour – 2 tbsp
  • Curd – 1 tbsp
  • Oil – 2 tbsp
  • Mustard – 1 tsp
  • Jeera – 1/2 tsp
  • Curry Leaves – a sprig

Method:

  • Wash and pat dry the bhindi. Trim the edges and chop into small pieces. Chop the onion finely and keep it ready. Heat a pan with oil and temper with mustard, jeera and curry leaves. Add finely chopped onions and saute until transparent.

  • Add chopped bhindi followed by salt, chilli powder, coriander powder and turmeric powder. Mix well so that all the ingredients blend well.

  • Add curd and mix well. This will help to get rid of the stickiness of bhindi and cook faster. Cook covered for 8-10 minutes or until bhindi gets soft.

  • Finally add besan/chickpea flour and saute in medium flame for 3-4 mins. Keep mixing so that it gets fried evenly. Switch off the flame.

Besanwali Bhindi / Besan Bhindi Fry is ready.

Serve hot with roti or rice.

Tips:

  1. Wipe the bhindi before chopping. U can chop bhindi into 1 inch pieces as well.
  2. Curd helps in cooking the bhindi faster and also gives a unique taste. So do not skip it.
