Beetroot is not my favourite. Hubby & Chotu love it though. I usually make this Beetroot Fry for chapathi/rice & love this Halwa!. This time I made this Beetroot Pulao as an one pot meal. It was perfect & quick for a lazy weekend. The lovely colour will attract kids and people who do not like beetroot like me will not make a big fuss! This Pulao and a simple raita would do to compile a hearty meal.

It is a good lunch box meal & easy for bachelors and working women. A small tip to make it even quicker (if u can plan ahead) is to chop the beetroot and refrigerate it. If that is done the pulao will be ready in no time.

Beetroot Pulao My Magic Pan

 

[Preparation Time-10 mins : Cooking Time- 30 mins]

Beetroot Pulao Ingredients:

  • Rice – 1 & 1/2 cups
  • Water – 3 cups
  • Beetroot – 1 cup ( chopped)
  • Peas – 1/2 cup (optional)
  • Onion – 2
  • Oil – 2 tbsp
  • Salt – as needed
  • Chilli powder – 1 tsp
  • Garam Masala – 1/2 tsp

Method:

  • Heat a pressure cooker with oil and add sliced onions. Saute until translucent. Add ginger/garlic paste and saute until raw smell goes off.

 

  • Add chopped beetroot & frozen peas. Add salt, chilli powder & garam masala.

 

  • Saute until all the masala blend well and raw smell goes off. Add washed basmati rice. Rinsing it just once will do.

 

  • Add 3 cups of water. Close the lid and pressure cook for 1 whistle & simmer for 5 mins. Once the pressure releases fluff it with a fork.

 

 

Thats it! Beetroot Pulao is ready!

Serve hot with raita.

Tips:

  1. Adding peas is totally optional. U can skip if u dont want.
  2. Chop the beetroot into small cubes. It will get cooked uniformly along with rice.
