Banana Oats Muffins

These Banana Oats Muffins are healthy & delicious breakfast muffins. Perfect for those busy days, they are light yet filling along with a glass of milk. Filled with the goodness of banana & oats, they are definitely a high source of fiber breakfast on the go. Unlike my other muffin recipes, I have used an egg in this. See tips for substitutes if needed.

I ended up making these Banana Oats Muffins recipe for this month’s challenge event “Shhhhh Cooking Secretly Challenge”conducted by Priya.

Every month I get to know about a new friend, and this time its Ramya Venkateswaran. I am glad to be paired with her this month, and the secret ingredients given were banana & oats.

So enjoy baking these healthy goodies!! 🙂

[Preparation Time-5 mins : Cooking Time- 20 mins]

Ingredients:

  • Wheat Flour – 1 cup
  • All purpose flour/Maida – 1/2 cup
  • Rolled Oats – 1 cup ( I used quaker)
  • Sugar – 1/2 cup
  • Cinnamon Powder – 1/4 tsp
  • Baking powder – 2 tsps
  • Baking Soda – 1 tsp
  • Salt – 1/2 tsp
  • Egg – 1 (see tips)
  • Milk – 3/4 cup
  • Banana – 2 mashed
  • Oil – 1/3 cup

Method:

  • Take a wide bowl. Peel the banana and mash it. To this add 1 egg and beat lightly. Now add oil, sugar and mix.

  • Add milk to the above mixture and mix. In a separate bowl, take both the flours, oats, baking powder, baking soda, salt, cinnamon powder and mix. Add this to the wet ingredients mixture.

  • Mix all the ingredients just to combine. Meanwhile preheat your oven to 200 deg Celsius. Line a muffin tray and scoop the Banana Oats Muffins batter into each hole. Bake for 18-20 mins or until an inserted tooth pick comes out clean.

Banana Oats Muffins are ready.

Cool them completely on a wire rack and store it in an airtight container.

Tips:

  1. U can substitute the egg with 1/4 cup yogurt or 1/3 cup of apple sauce.
  2. U can skip the all purpose flour and make it fully with wheat flour alone or even half and half.
  3. U can add choco chips or walnuts as per your taste.
  4. The addition of cinnamon powder gives a divine flavour, so do not skip it.
