Banana Cinnamon Mug Cake – 2 Mins Microwave Cake

I love cakes, especially homemade cupcakes. But unfortunately, I am the only person to have a sweet tooth in my family. Even when I make a small batch of 12 cupcakes, I end up eating most if it!! I had always wanted to try microwave mug cakes. This Banana Cinnamon Mug Cake is one such successful attempt. These are perfect for sudden cravings or if u are in a situation like me and do not want to bake many, this is for U!!

I found this recipe here. It is so simple and such a breeze to make this Banana Cinnamon Mug Cake. All u need to do is mix the wet and dry ingredients, throw it in a microwave safe mug and bake for 2 mins!! How cool is that? It is an ideal breakfast option. And it is eggless, flourless and butterless.. What more do u need? Oops did I forget to say it is sugarless too?

[Preparation Time-5 mins : Microwaving Time- 2 mins]

Ingredients:

  • Banana – 1/4 cup (mashed)
  • Honey – 1 tbsp
  • Oil – 1 tbsp
  • Vanilla Extract – 1/4 tsp
  • Oats Flour – 3 tbsp
  • Baking Powder – 1/4 tsp
  • Salt – a pinch
  • Cinnamon powder – a pinch

Method:

  • Mash the banana (I took a small sized one). Add honey and oil.

  • Add vanilla extract and mix well. To this add all the dry ingredients – oats flour, baking powder, salt and cinnamon powder.

  • Mix well to combine so that there are no lumps. Transfer the mixture into a microwave safe mug. Bake for 2 mins or until an inserted tooth pick comes out clean.

Thats it!! Banana Cinnamon Mug Cake is ready!!

Relish it as breakfast or as a dessert!!

Tips:

  1. I have used sunflower oil. U can use canola, vegetable oil too.
  2. To make oats flour, just grind rolled oats in a mixer into a fine powder. U can also substitute oats flour with all purpose flour.
  3. An over-ripe banana is perfect for this recipe.
  4. I have not greased the mug before baking, just enjoyed the Banana Cinnamon Mug Cake as is in the mug. If u want to serve it separately, grease the mug with a little oil and then bake.
  5. This Banana Cinnamon Mug Cake took 2 mins in my microwave (850 watts) Timings may vary based on the power of your microwave.
  6. Do not over-bake the cake. Else it will become hard.
  7. This cake will rise while baking, but will not overflow. Get an idea from the picture to see how much u can fill in a mug before baking.
  8. It might look sticky when hot, let it cool for a while and enjoy!!
