Aval/Poha Upma

Aval / Poha Upma is an easy breakfast/dinner recipe. It can be served as an evening snack too. Its a quick last minute recipe that comes to your rescue, when you are busy with other things and dont want to spend much time in the kitchen.

Ingredients:

  • Aval/Poha – 1 cup
  • Onion – 1
  • Green chilly – 2
  • Curry leaves – a sprig
  • Mustard – 1 tsp
  • Urad Dal – 1 tbsp
  • Oil – 1 tbsp
  • Salt – as needed
  • Turmeric Powder – 1/2 tsp
  • Lemon juice – from 1/2 a lemon
  • Corinder leaves –  to garnish

Method:

  • Wash aval/poha and drain the water completely. Soak it in water just about immersing level for 10 mins. Heat a pan with oil and temper with mustard & urad dal. Then add chopped onions, curry leaves & slit green chillies and saute till onions are transparent. Finlly add turmeric powder and mix.

  •  By this time aval/poha would have absorbed all the water. Add this to the onions, add required salt and mix well. Cook covered in low flame for a few mins. Finally add lemon juice and switch off the flame. Garnish with chopped coriander leaves.

Aval/Poha Upma is ready. Serve hot.

Tips:

  1. U can add vegetables of your choice to this upma.
  2. Do not soak the aval/poha for a longer time, else they will turn mushy.
  3. U can add grated coconut as per your choice.
