Aval Kesari – Poha Kesari – Poha Sheera

Kesari is a quick and easy sweet to make for sudden cravings. This Aval Kesari is no exception to it. I am always in the look for some quick sweets as I make it for Sai Baba pooja every Thursday. Somehow missed to click this Aval Kesari all these days. Without much preparation time and with simple ingredients from your pantry, u can treat yourself with this mouth-watering Aval Kesari.

[Preparation Time-5 mins : Cooking Time- 20 mins]

Ingredients:

  • Aval/Poha – 1 cup
  • Water – 2 cups
  • Sugar – 1 cup
  • Ghee – 3 tbsp
  • Cashews – few
  • Cardamom powder – a pinch
  • Yellow food colour – few drops(optional)

Method:

  • Heat a pan and dry roast aval for a couple of minutes, just until u get a nice aroma. Transfer it to a plate and let it cool down. In the same pan add a tbsp of ghee and roast the cashew pieces until golden brown. Keep it aside.

  • Now add water in the same pan and heat it. Meanwhile grind the roasted aval in a mixer into a semi-coarse powder. Once the water starts boiling add the aval powder.

  • First it will look watery. Cook in low-medium flame. Once all the water is absorbed and the aval is cooked, add the sugar and food colour (if using).

  • It will become watery once u add sugar. Add ghee and keep stirring in medium flame. Make sure there are no lumps. Add the fried cashews and cardamom powder. After a few mins u can see that it will start leaving the sides of the pan. Switch off the flame.

Thats it!! Yummy Aval Kesari is ready!

Serve warm topped with a dollop of ghee!!

Tips:

  1. Ratio of poha and sugar is 1:1. This Aval Kesari will not need double the amount of sugar like rava kesari.
  2. Adjust water according to the poha variety u use. I have used thick variety.
  3. Do not make it very thick. Switch off when it is in a slightly flowing consistency. It will thicken once it cools down.
  4. Do not add sugar before the aval is cooked well.
  5. U can add orange food colour too. Since both my Rava and Semiya Kesari are orange in colour, I added yellow food colour to make this Aval Kesari.
