Almond Cookies – Eggless Almond Cookies

Homemade cookies are always the best. They taste better than the store bought ones and are cheaper too. This Almond Cookies is yet another easy cookie variety. I would say its the simplest cookie ever. Just have to bring together a few ingredients and bake it. Tadaaaa!!! Almond Cookies will be ready in no time.

I made these cookies for the secret cooking challenge as my secret ingredients were almond and lemon. I wanted to use lemon zest but unfortunately bought a pack of waxed lemons, so could not grate in some lemon zest as per the original recipe here. Never mind, the cookies tasted so good. Chotu said ” Maa this is the yummiest cookies ever!!” What a compliment from him  Usually if he says “it tastes good” I consider it as a pass. But this time I have passed with distinction

[Preparation Time-15 mins : Cooking Time- 15-18 mins]

Ingredients:

  • All purpose flour – 1 cup
  • Almonds (coarsely powdered) – 1/2 cup
  • Butter – 1/2 cup
  • Powdered Sugar – 3/4th cup
  • Vanilla essence – 1 tsp
  • Salt – 1/4 tsp

Method:

  • Pre-heat your oven to 180 deg Celsius. Line a baking tray with parchment/baking sheet and keep it ready. Take powdered sugar, butter (at room temperature) in a bowl and mix until well combined.

  • To this add all purpose flour, almond powder, salt and vanilla extract. Knead it into a smooth dough. Do not apply too much pressure. Do it with light hands.

  • Make small balls. I used a tablespoon as measure to get even sized balls. Place it on the baking tray and press it lightly.

  • Bake it in the pre-heated oven for 15 to 18 mins. Keep an eye after 10-12 mins. The edges will turn golden brown. Once done cool it in a wire rack and store in an air tight container later.

Tips:

  1. U can add 2 tbsps of lemon zest along with the flour and then knead it.
  2. Do not knead the dough too much, else the almond cookies will become hard after baking.
  3. U can use whole wheat flour instead of all purpose flour or even half and half.
  4. I measured 1/2 cup of whole almonds (blanched) and pulsed it in my mixer coarsely. Got a little more than 1/2 a cup and used all of it.
  5. U can use almonds with the skin too.
  6. Add a tsp of almond essence for extra flavour.
  7. The above measurements makes 15 cookies.
